2/21 TOPIC: To be Vegan or not to be? Series will initiate with discussing the pros vs. cons of a Vegetarian lifestyle. MEAL PLAN: "Tofu" and how to prepare it 4 different ways, Baking Science/Why Dairy Free Baking Works, Desert – Banana Bread
2/28 TOPIC: Knife skills. Necessary kitchen tools. EZ after-work meals
MEAL PLAN: Dirty rice, Mac & Cheese, Ribs, Ginger Chicken, Easy Desert - Brownies
3/6 TOPIC: How to function as a Vegetarian on a daily basis. MEAL PLAN: Soup Varieties and Sandwich varieties, Cookies - Chocolate Chip Cookies
3/13 TOPIC: Defining Vegetarian food terms (soy, organic, gluten, etc.)
MEAL PLAN: Soy Chunks Stew. Tofu Tamales, Cooked greens tba, Gluten Free Baking

3/20 TOPIC: Healing kitchen/ Raw food basics. MEAL PLAN: TBA
4/3 TOPIC: Meal planning, shopping strategies. Kitchen timing. MEAL PLAN: Students will prepare 1 recipe of their choice for a class taste testing.
4/10 TOPIC: Preparing yourself, family and friends for your new Vegetarian upgraded attitude. Protein balancing.
MEAL PLAN: Class will prepare several items (tba) suggested from previous class, Proteins - Vanilla/ Chocolate Pudding
4/17 TOPIC: Class review, plan shopping expedition and final class meal plan MEAL PLAN: Vegan Chopped/ class participants will be given random food items and challenged to prepare a meal in 20 minutes.
4/24 TOPIC: "The great Veggie Grub Shopping Expedition" MEAL PLAN: Class participants will explore vegetarian friendly shopping establishments as a group. Chef Rootsie will give class an invaluable tour of where to shop and why. Class will also, be challenged to purchase items needed for final meal submission
5/1 TOPIC: Final class celebration. Class participants will present a 5 minute presentation of a 3 course meal plus dessert that they prepared. No menu plan except everyone will present and share their meals with classmates, invited guests, family and friends.

Let Chef Rootsie, CEO of Veggie Grub, guide you in this one of a kind, protein packed 10 week vegetarian cooking series. Not only will Chef Rootsie teach you how to prepare 40+ vegetarian food options, this 10 week series will also include learning the basics about Vegan dessert preparations and Raw food as well! In addition, a special Healing Kitchen session will demonstrate the basics of at home remedies. The entire 10 week series will be intense yet geared for beginners. For those who wish to learn further , a 4 week intensive will be held in May 2016 for those interested in advanced classes.
Above you will find a brief series overview. Each class will be broken up into two portions. There will be an educational portion that will discuss a range of topics. The other portion will deal with food instruction and preparation. Every class will include dessert and salad preparation. Some classes will be followed up with H.W. assignments.
